Ingredients:
- 1 bag Harrisons’s Omega Bread Mix
- One scant cup (one half 14-oz can) organic coconut milk, not cream of coconut.
- One scant cup (one half 14-oz can) organic canned pumpkin (not pumpkin pie mix)
- One cup organic orange juice Grated rind of one large organic orange (a microplane makes short work of this!)
- One cup fresh organic cranberries, roughly chopped, OR one quarter cup dried organic cranberries
Directions:

- Combine all ingredients and mix well.
- Spread in prepared pan and bake at 350 degrees for 55 – 60 minutes. (NOTE: fresh cranberries are only in season a few months a year, but they do freeze well. Dried are high in sugar, so if you don’t have fresh, reduce the amount used. By using a half can each of coconut milk and pumpkin, you can easily freeze the other halves in the same container for a future batch of bread.)
